I’ve told you about Dream Dinners, what it is, and the many benefits of it, but today I thought I’d share one specific time it has been a real life saver for me!
Do you see these tasty looking tacos? They are a dream dinner, and they came at just the right moment for me.
Honestly, Dream Dinners have been a life saver for me every time I pull one out of the freezer. There are times when I don’t use it for a week or more. But then there are the days where we have a Dream Dinner lunch AND dinner because it is just so convenient!
So here’s the thing, I work too much. Always have, probably always will. In order to force myself to slow down and spend some quality time with my kids this summer, while they are out of school, I decided to take them on a road trip. For a month. Without my husband.
Getting ready for this trip was a TON of work. Not only did I have to plan out a month’s worth of stops, hotel stays, and activities, while keeping it within a limited budget, but I also had to do a month’s worth of work in advance so I could leave without having my blog stop while I am gone.
I had to email detailed instructions to my Virtual Assistant for what I needed her to do while I was gone, I had to schedule out posts and social media, and I had to make sure I honored all of my commitments, cleaned my house, got my car road trip worthy, etc. All while running a household.
To say I was running a little ragged is an understatement. I was exhausted. And dinner was the very last thing on my mind. But unfortunately, it was not the last thing on my kid’s mind. They do that thing kids do…you know, want food, and then ask for it. Over and over and over.
We had this day that was just hectic. My to do list was longer than I could ever manage. I had to run to a store for something specific for a post, of course they did not have it, so I had to drive 20 minutes to the next store. Then, my son was eating caramel candies and lost not one, but two, fillings. Like seriously. So I had to run him to the dentist to get those fixed before we left because they couldn’t just be out for a month while we travel. My daughter had a messy diaper, and I opened my diaper bag to find I was out. Then, on the way home, we got stuck in miserable construction traffic. So by the time we walked in the door I was good and thoroughly frazzled.
I wanted a bubble bath and bed. But those pesky kids wanted dinner. And fortunately for me, Dream Dinners came to my rescue. I had stuck 3 in my fridge earlier in the week just for such a night. I pulled out the Beuno Steak Tacos, and turned on my oven. While the meat for the tacos cooked I got my daughter bathed and cleaned up, and my other kids set the table.
Then we ate! And it was seriously delicious!
I was so happy because typically on a night like that we would have ordered a pizza, or headed out for take out. The nutrition value of dinner would have been lower, and I would have spent more money. Instead we ate a great meal, at home!
With Dream Dinners we are eating at home regularly. We are saving money. I am shopping less, and we are wasting less.
And with tacos this good, no one misses the take out. Trust me.
Anyway, this recipe for apple soda is easy to make, and tastes really good. We recently went to a quinceanera, and along with all the yummy food, they served an apple soda. It was delicious, the combo of sweet, tart, and fizzy is great! So I thought it would be fun to make my own version. Who knew it would be so easy?
I will probably want to make it each and every time I make a Dream Dinner that is Spanish inspired.
We love the Dream Dinners. In fact, this month I ordered 12 meals. We ate two of them right away, which was great, and we had one from the previous month that I had stuck in the back of the freezer and forgotten about, but which came in really handy while getting ready for our trip. The other 10 are on the road with us. I am really excited to have meals that are ready to go to make cooking on the road fast, easy, and tasty! I am pretty sure it is going to save me a bundle, and be a lot nicer than fast food for dinner!

Apple Soda and Bueno Steak Tacos!
Ingredients
- 1 cup apple juice
- 4 cups seltzer water*
Instructions
- Place apple juice in a medium sized sauce pan, and bring to a boil.
- Turn down to a medium-low heat, and simmer for 20-30 minutes until it becomes syrupy.
- Remove from heat and allow to cool
- Combine two tablespoons of apple syrup with a cup of Seltzer water.
- Serve over ice.
