A fun, portable, snack or dessert with crunchy Mini NILLA Wafers, butterscotch Snack Pack pudding, banana slices, and a rich, buttery, caramel sauce.
School is back in, so let’s have a party! What do you say? I am all for any excuse to have a party:
Oh it is Monday, AND I actually showered, awesome, let’s celebrate.
Wait…I can see the bottom of the laundry hamper, definitely cause for celebration.
You lost a tooth…let’s invite the entire family over and have a dinner party comprised of all soft foods. Won’t that be fun?
I know, I am crazy! I fully admit I am one to celebrate the small accomplishments, sometimes in big ways. And I am always game for a killer party. It is exhausting. But so much fun. But you guys, today’s party is in no way over something small! And in no way exhausting. So I had to share!
Have you heard of walking tacos? It is that concept of making tacos in a portable, disposable container. You basically use your chip bag or whatever and making your taco in it so that it houses your food, so you can “walk” and eat. Then when you are done you throw the whole thing away.
The concept is kind of fun, right?
Well, I loved it so much I decided to try it with a dessert option for our fun Back to School party! I created a Go-Pak Snack Bar! Complete with tons of fun mix-ins and options for creating fun flavor combinations. It was so quick and easy to put together, and such a hit at our back to school party I had to share all the details of you too can throw this totally fun, but ridiculously easy, back to school party!
Let’s start with the food. I wanted to go with an after school snack theme. I was at Walmart, and say the Go-Paks in the bin at the front of the store. They are plastic cups full of cookies, and are only $1 each, so I bought a whole bunch in different flavors.
The cups are plastic, so they won’t leak, making them the perfect disposable container for the Go-Pak after school snack bar. And they are only about half full when you take the lid off, so they are perfect for the “walking taco” concept. I got some Snack Pack puddings, some fun mix-ins, like fresh fruits, sauces, and candies, and of course, Reddi-Wip to top it all off, and created a Go-Pak snack bar.
You can think of it like a mini trifle bar. The kids can layer the cookies, pudding, and extras, to make a trifle in a cup!
Of course, knowing my kids, they would put every flavor and every mix-in into the same cup, and as a result, they would be unhappy, and the flavor combinations would not be good. So I decided to set up a few guidelines for them and their friends to follow!
I created some cute printable “Recipe” ideas for different combinations and options to create the perfect Go-Pak for any preference.
Then I set up my table. I wanted the recipe cards to be a guide, but not a rule. So I decided I would set up the table in sections with the base, the pudding, the mix-ins, the sauces, and of course, the Reddi-Wip to top it all off, and let the kids work their way down the table.
First they had to choose from the Go-Pak options, from Mini NILLA Wafers to OREOs, to Teddy Grahams.
Then they added a Snack Pack® pudding flavor to their cup!
Then the extra mix-ins. These included fresh fruits, chocolate chips, candy pieces, and more! I only offered small containers of each so they wouldn’t go crazy.
Then the sauce. For the Banana Fosters Go-Pak, we used a caramel sauce that is buttery, rich and delicious, and super easy to make. But they had lots of options from chocolate, to peanut butter, and more!
Then they topped it with some Reddi-Wip, and grabbed a spoon!
I kept things simple, and used a chalkboard theme across my décor since it is for Back to School. You can pick up cute chalk board signs at Walmart. And you can print off these chalkboard recipes to display as well!

These were great combinations, but there are tons of ways to do it! Try a mint chocolate option with chocolate pudding, mint candies, and mint chocolate sauce. Or a peanut butter option with vanilla pudding, peanut butter, Nutter Butters, and peanut butter sauce. Honestly, the options are endless.
