Succulent, juicy, shrimp with a lovely cilantro honey lime glaze and avocado, all on top of crusty crostini for the win!
Shrimp is a must have for us for the New Year! And this is one of my absolute favorite ways to enjoy it. I wish I could explain the absolute tastiness of this little appetizer in a way that would do it justice. But I can’t. Just think of all your favorite things, mashed together, with crunch, softness, flavor and then smile because you get to have the recipe!
There are basically 2 recipes you have to know for this little appetizer. The first is the shrimp, which you can find here. The second is the salsa, which I had every intention of sharing, but never got that far, so I will share it with this recipe. But basically it is a delicious combination of pomegranate, persimmon, and pineapple, and then all those other things you want with salsa (except tomatoes) and it compliments the shrimp to perfection!
As you can see, you build it up. You toast your bread, spread on some guac, top with some of that yummy salsa I was just talking about, and add your jumbo shrimp! So easy. And if you premake all the components, you can just throw it out as soon as your guests come and it won’t get soggy or anything!
Grilled Shrimp Crostini
Ingredients
- 12 Crostini bread toasted, 12-18 pieces (depending on how much shrimp came in your pound of shrimp)
Tropical Salsa
- 1/3 cup pomegranate
- 1/3 cup persimmon
- 1/3 cup pineapple
- 2 Tbs red onion chopped fine
- 1 Tbs cilantro chopped
- 2 Tbs corn kernels
- 1 tsp lime juice
- a pinch of paprika
- a pinch of garlic salt
Spicy Honey Lime Shrimp- 1 lb
Gaucamole- Of choice or premade, or just use mashed avocado with a little salt and pepper!
Instructions
- Toast your crostini
- Top a half TBS of guacamole
- Chop persimmon and pineapple into small pieces, mix with pomegranate, red onion, cilantro, corn, lime, paprika, and garlic salt, and put a spoonful on top of the gaucamole
- Put 1 jumbo shrimp on top
- Garnish with more cilantro if desired
- Serve!
