I was trying to make some healthy cookies today. “Healthy” being the optimal word. I saw this simple recipe on Pinterest, and decided to give it a try, but of course I have a compulsive need to change recipes up some. Maybe I shouldn’t have. This recipe is so easy, but it ended up with a sort of macaroon texture, rather than a chocolate chip cookie texture. So, while it tasted okay, it was not my favorite, and certainly did not work for me as a cookie replacement, but did make for a nice snack.
The other thing I really liked about this recipe is that it uses those bananas, you know, the ones that are past due? Like, not quite black, but too old to enjoy on their own. I know you can use them in banana bread, and banana bread muffins, but who doesn’t like options, right? A word of advice, the banana flavor does not get hidden by sugar and flour since there is none in this recipe, so make sure they are not too ripe, or the “cookies” will taste gross.
I started by making it like this:
- 4 large bananas- overripe
- 2 cup quick cooking oats
- 1/2 cup coconut
- 1/3 cup chocolate chips
I used a fork to mash it all together. Put it on a baking sheet, and baked at 350 for 15 mins.
After they cooled for a bit I tasted them. My son tasted them too, and said, “Can’t you just make cookies with sugar in them?” haha! So I did. I took the rest of the mixture (since it makes 2 trays), and I added another 1/2 a cup of oats, and 2 tbs of brown sugar. The second batch was better, but for me the texture was off. Like I said, it is more like a macaroon then a cookie. Next time I might leave out the coconut and see if that is why it reminded me too much of a macaroon. Anyway, the verdict is that it depends on who you are if you will like it. My neighbor’s little boy really enjoyed them, so I sent a plate home with him! My bananas may have been too ripe.
Try it and see if you like it, it is such as quick recipe, and all of the ingredients are CHEAP, so what do you have to lose?
