This pickled veggie slaw is tangy, healthy, delicious, and perfect for keeping on hand to amp up salads, sandwiches, or to just eat plain. Delicious.
Hi friends, I got a new camera, and I am playing with it a lot. I have not yet mastered white balance, but I feel like I am slowly finding my style, and will be producing better quality images for you guys. I am loving learning this photography thing. There is a lot to know, and I am apparently a slow learner. But boy is it fun!
Something else fun is this slaw. I actually really hate that word. It does not sound elegant, sophisticated, or even very appetizing, but trust me when I say that this slaw is all of those things and more! I will be sharing an excellent (and ridiculously easy) way to to use it on Monday, but today I wanted you to see it, all by itself, because it deserves its very own post it is just that good!
Plus it is really easy. I bough already shredded carrots and radishes so the only thing I had to even cut was the cucumbers! Then mix up the brine, and I was done. Easy Peasy!
You can make this ahead of time and keep it in the fridge, but if you want it right away, give yourself at least 15 minutes of brine time.
Pickled Veggie Slaw
Ingredients
- 1/2 cup carrots cut into matchsticks
- 1/2 cup radishes cut into matchsticks
- 1/2 cup cucumber cut into matchsticks
Pickling Brine
- 1 cup Water
- 1 cup White Vinegar
- 2 1/2 Tbs White Sugar
- 1 tsp Dill Weed
Instructions
- Layer vegetables in a jar
- Mix pickling brine together in a bowl
- Pour brine over match-sticked vegetables
- Refrigerate at least 20-30 minutes (longer is better)
