Cinnamon Toast Crunch Crepe Cake. Crepes and a cinnamon cream cheese filling, layered to make a cake, and topped with cereal, for the perfect sweet treat or breakfast!
Do any of you have a Skylanders fan in your house? Well I do! And when I saw that General Mills and Skylander teamed up to offer an exclusive Skystones game free with boxes of cereal, I had to jump on that.
We love playing games as a family, and the Skystones game fosters family fun and fuels development through imaginative and cognitive play. That is, when we can get through a game without my kids trying to cheat, or arguing about who is winning and who isn’t. Haha, but that is life, and a great time to teach my kids about being a good sport. Right?

Anyway, I got this darling Skylander Cake Topper, and wanted to make something really fun and delicious for breakfast that used the specially marked Big G cereals (the ones with the Skystones cards inside and game board on the back of the box). But I also wanted to use my cake topper. So I made Crepe Cake! And what is more fun and awesome than a crepe cake?
I wasn’t totally sure what kind to make, as there were lots of Big G cereal choices with the game cards in them, including Honey Nut Cheerios, Frosted Cheerios, Fruity Cheerios, Reese’s Puffs, Cookie Crisp, Lucky Charms, Trix and Cinnamon Toast Crunch. But there is just something about cinnamon and sugar that make me happy, so I figured Cinnamon Toast Crunch was the way to go!
And boy and I glad I chose that option.
This crepe cake was ridiculous. And by ridiculous I mean AMAZING! It is a stack of sweet crepes layered with a cinnamon and sugar cream cheese filling, and topped with delicious Cinnamon Toast Crunch, which basically meant I got to feed my kids Cinnamon Toast Crunch cheesecake and call it breakfast because it is made with crepes! Awesome.
This cake is way easier to make than you think, although it is a little time consuming to make all the crepes. My kids were very anxious to dig in, so I doubled the batch so they would have something to snack on while I assembled the cake. It was a good idea since the cake has to be refrigerated for a couple hours, but a bad idea because it meant I made A LOT of crepes! Haha…exhausting.
Skylanders Cinnamon Toast Crunch Crepe Cake
Ingredients
Crepes
- 6 eggs
- 1 1/2 cups milk
- 2 tsp white sugar
- 2 cups all-purpose flour
- 1 Tbs cinnamon
Filling
- 8 ounces cream cheese
- 1 cup powdered sugar
- 1 Tbs cinnamon
- 3 Tbs half and half
Instructions
- Put crepe ingredients in a bowl, and using a whisk, mix it all together
- Preheat a 6-8 inch skillet
- Spray skillet with non-stick cooking spray
- Pour 1/4 cup crepe batter into heated skillet, and swirl around to cover the entire bottom
- When edges look dry, flip crepe, let cook about 10 seconds, and remove from the pan.
- Mix the filling ingredients together
- Layer a crepe, and a tbs of filling, spread across crepe, and continue layering until your crepe cake is as high as you want.
- Refrigerate 2-4 hours and serve
