A savory beef roast that is easy and delicious and the perfect simple spinach salad side, complete with juicy berries, crunchy almonds, and flavorful feta!
I took a big step today and took my kids out of a few of their activities. I am battling mommy guilt over it, but really excited about making the after-school hours a little easier. I feel like I talk about this in every post, but honestly, it gets harder and harder to do everything I need to do every night after school. With four kids in an activity each, our nights are always packed. Downtime is hard to come by.
I cut out some activities, but was still looking for ways to free up time to spend actually enjoying my family. Spending less time on meals is one way to free up some time. However, last week was a week full of take-out and pancakes-for-dinner kind of nights. So while I had more time, I was not super happy about what my kids were eating. Then I was walking the Publix aisles and was reminded of this easy, one-stop solution for family mealtime: Tyson® Ready for Slow Cooker Meal Kits!
I found the Tyson® Ready for Slow Cooker Meal Kits Beef Roast in the Ready to Cook section of the Fresh Meat case, and let me tell you why I love them so much. In a nutshell it is because all the work is done for you. Veggies are washed and chopped. Seasoning is all put together. All you have to do is toss it all in the slow cooker to cook! In addition, there are a lot of different meal options from pastas to pork roasts, and even beef stew.
And do you know what goes perfectly with a nice beef roast? A fresh salad. Particularly spinach salad with juicy strawberries, almonds, and feta. And of course an easy to whip up fresh dressing? Because I could put the beef roast in the slow cooker, and the salad whips up quick it took less than 15 minutes of my time to have dinner ready.
And this salad is a personal favorite. Whenever I make it my kids gobble it up. It is the ideal way to get kids to eat something green. And did I mention I get lots of requests for this recipe? Every time I take it to a party or potluck someone asks for the recipe. This dressing is great made ahead too, so when you put everything in the slow cooker for the roast, you can whip up the salad dressing and place it in the fridge. Then, when the roast is done, you just have to toss the salad together and dress.
You guys, since I work pretty much full time, and have a lot of demands on my time, I really appreciate any help I can get. There are days when just thinking about dinner is too overwhelming. So while I truly enjoy cooking, it is so nice to not have to think about it every single night. And even better to have tasty options I can start earlier in the day when I have more energy, and fewer distractions. Plus the meal kits are easy to customize to our personal preference by adding extra veggies or seasonings.
Strawberry Spinach Salad
Ingredients
- 10 ounce bag baby spinach
- 1 cup sliced strawberries or other fresh berries
- 1/4 cup almond slivers or pecan pieces
- 1/4 cup feta crumbles
Dressing
- 2 tablespoons toasted sesame seeds
- 1 tablespoon poppy seeds
- 1/3 cup white sugar
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1/4 teaspoon paprika
- 1/4 teaspoon Worcestershire sauce
- 1 tablespoon minced red onion
Instructions
- Whisk dressing ingredients together in a medium sized bowl.
- Cover, and chill in the fridge for at minimum one hour.
- About 5-10 minutes before serving, toss spinach, strawberries, almonds, feta, together in a large bowl.
- Top with chilled dressing and toss again.
Notes
Toss in dressing only a few minutes before eating, as the spinach can wilt and get soggy.
