We love having fast meals at our house for those busy nights after sports, homework, and errand running, and this is a favorite. French bread pizza is so easy to make it is almost criminal, and with the right toppings, it can taste like a million bucks.
Feel free to make your own french bread if you want, I just bought mine at Sam’s Club. Two large loaves are about $3, making this a low cost meal as well. I had some leftover BBQ shredded chicken from BBQ chicken burritos, so I used that, but you can just grill up a breast, shred it, and toss it in your favorite BBQ sauce, a little chicken goes a long way on a pizza. I then cooked up some garlic, onions, and sweet baby peppers. I love carmelized onions on pizza! Yummy! I used spaghetti sauce from a jar (Prego Heart Smart), and a 3 cheese blend (also from Sam’s Club), put on some canned pineapple because my kids love it, and whala, done!
Just look at the cheesy goodness…
BBQ Chicken French Bread Pizza
Ingredients
- 1 loaf french bread
- 3/4 cup pizza or spaghetti sauce
- 2 cups cheese mozzarella or blend
- 1/2 cup BBQ shredded chicken
- 1/4 cup pineapple
- 2 baby sweet peppers
- 1 Tbs garlic minced
- 1/4 an onion sliced
Instructions
- Preheat oven to 450
- Cook onion, garlic, and peppers in a saute pan with a little bit of water, until onions are carmelized. Let the pan get hot first, add garlic, add onion, and then peppers. Let onions stick to the bottom so they get nice and brown, and add more water if necessary while cooking.
- Cut french bread in half hot dog bun style
- Spread some pizza or spaghetti sauce over the open face of the bread
- Put on a light layer of cheese
- Spread chicken, and other toppings over
- Sprinkle another light layer of cheese over the top
- Bake on baking sheet in 450 degree oven for 8-10 minutes until cheese is melted and bubbly, and edges of crust are starting to turn brown (keep an eye out, every oven is different)
- Serve immediately!

This is a great option for pizza night, to use up leftovers, or when you are in a hurry. Sometimes when I have odds and ends vegetables I throw one together, and we enjoy every bite! What are your favorite pizza toppings?
