Chocolate fudge protein waffles topped with strawberries, whipped cream, and chocolate sauce for a protein packed, good-for-you, and delicious breakfast or dessert!
Looking at these waffles, would you think they are good for you? Probably not, but they are, and they taste awesome too. Which I think can be a challenging combination.
I remember growing up my parents would experiment with good for you foods, and sometimes those experiments were a success, and sometimes they went wrong, horribly, horribly, wrong! Today I tried something new, and it went right. Oh so deliciously and totally right!
I have been looking for new ways to increase protein intake in my son’s life. You may remember this Dirty Monkey protein shake that uses tofu in it. He is a picky eater, and tends to stick to carbs. He loves oatmeal, pancakes, waffles, cucumbers, and fresh fruit.
We load up on the good stuff wherever we can, but I have been looking for ways to get protein into the foods he already likes. Hence the protein waffles! I have a friend who is a fitness competitor, Nathalie at RockYourFitness, and she makes protein waffles all the time.
I was at Target and saw the EAS® Lean 15™ Chocolate Fudge Protein Powder and thought it would make a really fun protein dessert waffle, that my kids would love, and I would too. So I called up my friend and asked for some tips for making them.
It took me about 4 batches to get the consistency I wanted, and to have them turn out just right, but you guys, they are so amazing. I can’t say it enough. I loved them. My son LOVED them. And everyone else did too. It was a total success story.
And any success that helps get protein into my kid’s diet is one I can celebrate. In addition to my kids, my husband has been training for a marathon, and so he too needs to up his protein intake as his activity levels have been increasing. This is a great way for him to do that as well.

Chocolate Fudge Protein Waffles
Ingredients
- 7 egg whites
- 1 tsp Stevia
- 2 scoops EAS® Lean 15™ Chocolate Fudge Protein Powder
- 1/2 cup oats ground into flour
Toppings
- Fresh strawberries
- Fresh made whipped cream 4 ounces whipping cream, 1/2 tsp Stevia, blend until desired consistency is reached, about 30 seconds
- Chocolate sauce optional
Instructions
- Beat 7 egg whites in a mixer on high for about 45 seconds.
- Grind oats in a blender until they are a flour, then add oat flour, Stevia, and EAS® Lean 15™ Chocolate Fudge Protein Powder to the mixer
- Mix for another 2 minutes or so while you are heating your waffle iron
- Pour approximately 1/2 cup batter into sprayed waffle iron
- Cook 4-6 minutes until puffy and desired crispiness is reached.
Notes
*For crunchier waffles, let cook longer
***Only fill iron about 1/2 way so that it does not puff up and spill over.
***Beating your eggs longer will result in airier, lighter, puffier waffles
****You can use as little as 1/4 cup oat flour and achieve great results. I opted for 1/2 cup so they would be more filling, and a thicker, heavier consistency, which is what we like.
***** Top with warmed nut butters for even more protein and a healthier topping alternative.
