These Instant Pot Greek chicken gyros are absolutely incredible! I love that you can get that tender, flavorful chicken in under 30 minutes — the pressure cooker really is a game changer for weeknight Mediterranean meals. The homemade tzatziki recipe is a must, store-bought just never compares to fresh cucumber and dill. Your tip about warming the pita before assembling is spot on, it makes all the difference in texture.

Definitely making these for our next Greek night — the feta and red onion topping is calling my name. Thanks for another weeknight winner!

My favorite cake for hot summers! But delicious year-round! For some reason, this is listed as a "Georgia Cake" in my Mom's recipe collection. Seems like a Georgia Cake would be peach. Maybe it's a reference to the beautiful colors.

Anyway, my question is: Drain or don't drain the pineapple? I have too much pudding mix, so I went ahead & added the juice (crossing fingers & all appendages! :) Thanks for the recipe, tips, and answers! Blessings.

Drain pineapple juice or keep some? Can I chill it first?
Also, are 2 small vanilla puddings ok as sub for one large? The ounces won’t match: 2x3.4 vs 6 oz..
