This is a quick, delicious breakfast casserole that is the perfect breakfast for a busy morning. It is packed with goodness, and can be cooked in the crock pot or slow cooker over night. I just threw everything together before heading to bed, and woke up to a clean kitchen and breakfast ready to go! You can add sausage or bacon crumbles, or ham, other vegetables, etc. I wish I had mushrooms to add in, but this is what I had, and it turned out to be pretty tasty. I topped it with a few fresh tomatoes, because I had them on hand, and they sounded yummy.

- 1 red bell pepper diced
- 1/2 yellow onion diced
- 4 partially cooked baked potatoes diced
- 1 cup blend cheese
- 6 eggs
- 1/2 cup milk
- 1 cup frozen spinach
- 1 tsp dry mustard
- 1 tsp garlic salt
- salt and pepper to taste
- Mix together eggs, milk, and seasonings
- Dice veggies and potatoes
- Put potatoes in bottom of crock pot
- Add frozen spinach
- Add cheese
- Pour milk and egg mixture over it all
- Add diced peppers
- Give it a little stir
- Cover and cook on low for 8-9 hours
