I mean, let’s talk about this for a second here. Something about sticks make food just so much more fun. But I want to tell you that you can make this chicken without using the skewer. Just marinate the whole chicken breast, and grill until it reaches an internal temp of 165 degrees. But that is beside the point. Stick foods. It is like fair food. Something about putting meat, or a dessert on a stick makes it just that much tastier! Hence the skewers.
Furthermore, they are great for summer grilling, for lunches and portion control, for kids, and for easy meal prep. So, no matter what time of year it is, these are great.
Now let’s talk about the Greek thing. Greek flavors are some of my favorite to cook with. Dill, mint, lemon, olives, hummus, greek yogurt, garlic, the list goes on and on. It is good stuff, especially because it is simple but impactful. Tzatziki, for example, so much flavor, but so simple. Great as a dip, a sauce, eaten with a spoon, etc. Anyway, these chicken skewers hit all the right notes for me. They are healthy. Easy. Flavorful. Fun. I love dipping them into the homemade tzatziki, but they are also great with a drizzle of lemon, served with brown rice, or put into a pita with tzatziki. The possibilities are endlessly delicious.

Greek Chicken Skewers with Tzatziki Dipping Sauce
Ingredients
- 1 1/2 lbs chicken breast cut into 1 inch cubes
- Skewers
Marinade
- 1 cup olive oil
- 1/4 tsp cayenne pepper
- ½ cup lemon juice
- 5-6 cloves of garlic
- ¼ cup fresh mint leaves
- 2 Tbs dried oregano
- 2 Tbs fresh rosemary
- salt and pepper
- 1/2 cup greek yogurt
- 1 Tbs red wine vinegar
Tzatziki
- 1 cup plain Greek yogurt
- 2 garlic cloves peeled and minced
- 3/4 cup peeled, seeded, finely diced cucumber
- 1/2 Tbs fresh dill chopped fine
- 1 tsp mint chopped fine (optional)
- 1 Tbs fresh lemon juice
- salt and pepper to taste
Instructions
- Put chunked chicken into a gallon sized ziplock bag.
- Place all marinade ingredients in a food processor, and process
- Pour marinade over chicken. Marinade for at least an hour.
- Pull out of fridge 15 minutes before you are ready to grill.
- If baking, preheat oven to 400 degrees.
- Put chicken on skewers.
- Oil the grates of the grill, then grill until internal temperature reaches 160 degrees F. This takes approximately 15 minutes. Or bake for 15-20 minutes.
- Meanwhile, prepare tzatiziki, by mixing all ingredients in a bowl.
- Serve chicken with tzatziki dipping sauce.
