Easy to make Hawaiian Haystacks. This classic dish is a combination of your favorite toppings with a creamy chicken sauce served over rice. The creamy chicken gravy, served with fresh veggies, pineapple, and crunchy chow mien makes for a fun meal that is served “bar style” so everyone can customize it to their preference.

I love Easy Hawaiian Haystacks for a busy night, but when I want a more sophisticated recipe, this is it!
A sweet and savory dinner perfect for the whole family!
This is one of our favorite easy dinners for busy nights, or bad days. The kids love it. It is easy to customize to personal preference. And it helps clean out the odds and ends in the fridge. Making it a big win for me! Plus it is so easy to make.
What you Need to Make Hawaiian Haystacks
Making this recipe is really easy because the real key is the chicken gravy that is served over rice, and then you add all the toppings to it. The toppings are totally customizable, and you can adjust to your personal preference. So let’s talk about the gravy, and what you need to make it:
- Chicken: It wouldn’t be chicken gravy without chicken, I like using a shredded up rotisserie chicken, but you can also quickly cook up a couple chicken breasts with some salt, pepper, and garlic seasoning and shred it for the same results.
- Butter: This is the base of the roux, that will make the gravy nice and thick.
- Flour: This is the other part of the roux. You want an all-purpose variety of flour.
- Chicken stock: Adds flavor, I suggest a high quality stock, or a concentrate mixed with water.
- Heavy Cream: You can sub half and half or even milk here, but the heavy cream gives it such a nice consistency.
- Sour Cream: Flavor add! And so good. Trust me, this is a must add to your gravy.
- Seasonings: Salt and pepper are the basics, sometimes I like a pinch of paprika, garlic or onion powder, or even some cayenne for heat.
When we want to make a special dinner for the kids, this is it. They all love Hawaiian Haystacks, and I almost never make them because I forget about them! Which is the worst because they are always a big success!
The nice thing about this meal is:
- Customizable: The kids can all customize it to their preference. My son who doesn’t like tomatoes left them out. My daughter who loves olives, loaded her plate full. I love meals like this because everyone eats, and no one complains, and we all end up happy!
- Great as leftovers: I have never been a big leftovers eater, other than Taco Soup which I think tastes better the next day, so another option I can double up on, and serve twice, or eat for lunches is always a big win over here.
- Clean out the fridge: I love this when I have just a handful of this or that in the fridge. Like after a pizza night, when I have half a can of olives, or pineapple leftover, this is the perfect recipe to make.

Hawaiian Haystacks
Ingredients
- 1.5 lbs chicken cooked and shredded or cubed
- 1 tsp garlic salt
- salt and pepper to taste
Hawaiian Haystack Gravy
- 4 Tbs butter
- 1/2 cup flour
- 16 ounces chicken stock
- 3/4 cup sour cream
- salt and pepper to taste
- 1/2 cup heavy cream
- 1/4 tsp Other seasonings As desired add a pinch of cayenne, paprika, garlic powder, onion powder
Toppings
- Pineapple
- Olives
- Cucumbers
- Tomatoes
- Cheese
- Chow Mein Noodles
- Crispy onions
- 4 cups cooked rice
Instructions
- Start rice cooking according to package directions
- In a medium size sauce pan on medium-high heat, melt butter, add in flour, and stir together, then whisk in the chicken stock and salt and pepper, whisking until smooth
- Add sour cream and heavy cream, and turn down to a simmer, whisk it together, and keep an eye on it so it doesn't scortch
- Cook the chicken with a little water, and season with garlic salt and salt and pepper to taste.
- Chop up toppings, and serve everything over the rice. Layering rice, gravy, chicken, and toppings of choice!
