This recipe is so easy, almost too easy to call it a “recipe”. I was hungry tonight, and wanted something healthy, and fast. I also have a very limited supply of food options right now, with a move coming up in a few days, I have sort of avoided grocery shopping. I had some cooked chicken from last night’s dinner, and a few random vegetables in my crisper. I also had quinoa in the pantry. This is what I came up with, and it was pretty dang good. Good enough that I will be making it again. Plus it is healthy and protein packed.
- 1 zucchini- chopped
- 1 c cooked quinoa cook in saucepan with 2 parts water to 1 part quinoa, boil, and let steam for 15 minutes
- 1/2 c chopped carrots
- 1 tsp garlic salt
- 1/2 c water
- 1 boneless skinless chicken breast cooked and cubed
- Cook the quinoa.
- In separate pan, put in chopped veggies, water, and seasoning.
- Cook until almost tender.
- Add in chicken.
- Add in cooked quinoa.
- Serve hot.
