One thing that I am trying to focus more on is eating locally and seasonally. I picked up the banana squash I used for this recipe from a local produce stand. It was cheap and delicious. This makes a great side dish, a nice dessert type dish for when you have a sweet tooth, or even a great snack.
I fed this to my almost 1 year old baby, and she devoured it.
I think taking something relatively healthy (squash) and smothering it in brown sugar and butter is right up my alley. This is such an easy way to make squash, and even my kids loved it.
Sweet Banana Squash
Ingredients
- 1 Banana Squash
- 2 Tbs of Butter
- 1/2 cup Brown Sugar
Instructions
- Cut your banana squash in half
- Scoop out seeds
- Bake at 375, open face down on baking sheet for 30 minutes
- Cut off the skin of the banana squash, and cube the flesh
- In a skillet, melt some butter, mix squash in with brown sugar, and heat until sugar is melted, and squash is coated.
- Serve warm.
