Cauliflower Alfredo Crab and Noodles

Ingredients

  • 1 lb. uncooked fettuccine noodles
  • 2 large heads cauliflower
  • 6 cups vegetable broth
  • 3 tbs minced garlic
  • 1 1/2 tbs butter
  • 1 teaspoon salt
  • pinch of fresh cracked black pepper
  • 1/2 olive oil
  • 1/4 c heavy cream or substitute half and half, or whole milk
  • 1 cup water
  • 1 package imitation crab meat
  • 2 cups frozen petite peas

Instructions

  • Bring vegetable broth to a boil
  • Add chopped cauliflower to boiling vegetable broth
  • Cook at least 15 mins until cauliflower is soft
  • While cauliflower is cooking saute garlic in melted butter.
  • Cook noodles according to package, reserve one cup of water from noodles for sauce.
  • Put cauliflower and some of broth into blender, as well as sauteed garlic.
  • Blend until smooth, add more water or broth as needed. Near end, add in olive oil.
  • Add in salt and pepper and blend a few more minutes.
  • Add back into pan garlic was sauteed in.
  • Add cream and water, to desired thickness, mix in bite sized pieces of imitation crab, stir in frozen peas.
  • Cook until peas are heated through
  • Mix in cooked noodles.
  • Serve hot
