Crock Pot Spinach and Red Bell Pepper Breakfast Casserole

Ingredients

  • 1 red bell pepper diced
  • 1/2 yellow onion diced
  • 4 partially cooked baked potatoes diced
  • 1 cup blend cheese
  • 6 eggs
  • 1/2 cup milk
  • 1 cup frozen spinach
  • 1 tsp dry mustard
  • 1 tsp garlic salt
  • salt and pepper to taste

Instructions

  • Mix together eggs, milk, and seasonings
  • Dice veggies and potatoes
  • Put potatoes in bottom of crock pot
  • Add frozen spinach
  • Add cheese
  • Pour milk and egg mixture over it all
  • Add diced peppers
  • Give it a little stir
  • Cover and cook on low for 8-9 hours
