Plantain, Yam, and Beet Chips

Ingredients

  • Oil for deep frying
  • plantains
  • yams
  • beets
  • salt
  • cayenne
  • Limes

Instructions

  • Put 2 inches of oil in a deep pan on the stove at medium high heat, bring to 350 degrees
  • Use a mandolin slicer set to the thinnest setting to shave the plantain, yam, and beets
  • Combine salt and cayenne together
  • Fry as many slices as will fit without crowding, turn if necessary (total cooking time should be only about 2 minutes
  • Remove with tons of slotted spoon
  • Sprinkle with seasoning, and lime juice (optional)
  • Serve immediately
