Spaghetti Squash Lasagna

Spaghetti Squash Lasagna: A baked spaghetti squash stuffed with lasagna filling and topped with cheese. This recipe is SO EASY, and seriously tasty.

Ingredients

  • 2 large Spaghetti squash
  • 1/2 lb mild sausage
  • 1/2 lb spicy sausage
  • 3/4 cup ricotta
  • 1 cup cottage cheese
  • 3 cups marinara
  • 1/3 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 cups shredded Monterey Jack cheese
  • Parsley

Instructions

  • Cut spaghetti squash in half, and scrape out seed
  • Place face down on baking sheet lined with a silicone baking mat to make clean up a snap, in 350 degree oven, and bake for 50 minutes
  • Brown sausage and crumble
  • Mix ricotta and cottage cheese, marinara, and sour cream with sausage and seasonings
  • Remove spaghetti squash from oven, turn over, fill to heaping with mixture
  • Top with shredded cheese
  • Bake 10 minutes at 350
  • Broil 2-3 minutes on high until cheese browns
  • Top with some Parsley Flakes
  • Serve warm
