Super Bowl Mexi Cups
Take a crunchy phyllo dough cup and fill it spicy sausage, avocado, cilantro, and tomato and you have a tasty little Mexicup appetizer.

- Phyllo dough cups
- 1/2 pound spicy sausage
- 1/4 cup sweet corn kernels optional
- 1/3 cup diced onions
- 1/4 cup grape tomatoes sliced
- 1/2 an avocado diced
- 1/4 cup salsa
- Fresh cilantro to taste
Brown your sausage with your onion, and when almost done, add in corn kernels so that they are warmed, but not cooked too long.
Your phyllo dough cups should be pre-baked and ready to fill
Put about a tsp of salsa in the bottom of each cup
Then put a scoop of sausage mixture in the phyllo cup
Top with diced avocado and tomato
Garnish with cilantro
Serve warm
