Beef Barbacoa

Beef barbacoa is really easy and very versatile. It's delicious in burritos, tacos, nachos, salads, or just plain!

Ingredients

  • 4 lb beef round roast
  • 2 Tbs olive oil

Sauce

  • 1/3 cup apple cider vinegar
  • 4 Tbs chipolte salsa or chipolte peppers
  • 1 tsp adobo sauce
  • 1/4 cup lime juice
  • 1 cup chicken stock
  • 1/3 cup minced garlic
  • 2 Tbs cumin
  • 2 tsp dried oregano
  • 1 tsp black ground pepper
  • 1 Tbs Garlic salt

Instructions

  • Put sauce ingredients in a blender, and blend until smooth
  • Heat oil in a saute pan, and sear beef round roast on all sides to lock in juices
  • Put seared roast in crockpot, pour sauce over top
  • Cook on high heat for 6 hours
  • Shred and serve in tacos, burritos, salads, etc.
