Ingredients

  • 1 box Italian Herb Flat Bread Krusteaz Mix
  • 1/2 cup fig jam
  • 2 Tbs balsamic vinegar
  • 1/2 cup leek stem Chopped
  • 1/4 cup onion
  • 1 clove garlic minced
  • 1 tbs olive oil
  • 1/4 cup feta I used Redwood Hill Farms Raw Milk Goat Feta
  • 2 cups arugula

Instructions

  • Make flat bread according to box directions. I made 3 oval flatbreads. This is a lot, so you could cut the recipe down if only feeding 1-2 people.
  • While flat bread bakes, heat olive oil in a saute pan, and add fresh garlic, onion, and leeks and saute
  • In a small bowl mix fig jam and balsamic together
  • When flat bread is done baking, spread the jam mix over the top, sprinkle some feta over, and top with sauteed veggies.
  • Top with fresh arugula, and serve warm!

Notes

If you can get fresh figs, add them on top.
To make less, cut jam mix down, but go ahead and play with the other ingredient amounts. It kind of just depends on how much topping you want. Leeks have a strong flavor, so be careful not to use too many.
