- 2 large garden tomatoes chopped
- 1 medium sized zucchini spiral sliced
- 1 clove of garlic minced
- 1 tsp olive oil
- 2 basil leaves
Spiral slice zucchini with a Briefton's spiral slicer
Heat oil in a pan, add minced garlic and zucchini
Saute for a 3-4 mins
Add chopped tomatoes, with juices, and let cook 3-4 more minutes
Remove from heat, put in a bowl, and top with fresh basil
