- 1 1/2 lbs beef stew meat
- 1 Tbs olive oil
- 1 Tbs minced garlic
- 1/2 cup chopped onions
- 2 cups carrots sliced
- 5-6 russet potatoes peeled and diced
- 1 can beef stock
- 1 can cream of mushroom soup
- 1 package onion soup mix
- salt and pepper to taste
- 2 cups petite peas
Pat your beef dry, then put it in a hot skillet.
In a hot skillet, sear outside of the beef, but not cooked through.
Dump beef into crock pot
Put onions and garlic in the hot pan, and saute for a minute or two until onions are translucent.
In a bowl mix together cream of mushroom soup, beef broth, and onion soup mix.
Put potatoes and carrots in the crock pot
Dump soup mix over the top
Salt and pepper to taste
Cook on low 6-8 hours
Taste and season according to taste
Right before serving, stir in the petite peas.
