Ingredients

  • 1 1/2 lbs beef stew meat
  • 1 Tbs olive oil
  • 1 Tbs minced garlic
  • 1/2 cup chopped onions
  • 2 cups carrots sliced
  • 5-6 russet potatoes peeled and diced
  • 1 can beef stock
  • 1 can cream of mushroom soup
  • 1 package onion soup mix
  • salt and pepper to taste
  • 2 cups petite peas

Instructions

  • Pat your beef dry, then put it in a hot skillet.
  • In a hot skillet, sear outside of the beef, but not cooked through.
  • Dump beef into crock pot
  • Put onions and garlic in the hot pan, and saute for a minute or two until onions are translucent.
  • In a bowl mix together cream of mushroom soup, beef broth, and onion soup mix.
  • Put potatoes and carrots in the crock pot
  • Dump soup mix over the top
  • Salt and pepper to taste
  • Cook on low 6-8 hours
  • Taste and season according to taste
  • Right before serving, stir in the petite peas.
