Slow Cooker Black Bean Soup

Healthy, hearty, and so easy to make. This slow cooker black bean soup is packed with all the nutrients and anti-oxidants you need to protect your body this winter, and only requires a few minutes prep time, then the slow cooker or crock pot does all the work!

Ingredients

  • 1 lb spicy sausage
  • 1 tbs cumin
  • 1 tbs onion powder
  • 1 tbs chili powder
  • 2 Tbs minced garlic
  • 1 Tbs dried chives minced
  • 3 15 ounce cans black beans
  • 1 sweet potato peeled and diced small
  • 1 medium onion peeled and diced small
  • 1-48 ounce box of beef broth
  • 1 15 ounce can of petite diced tomatoes
  • 2 cups corn kernels

Instructions

  • Cook 1 lb of spicy sausage until it is in crumbles, the put in slow cooker
  • Peel and dice sweet potato and onion, and add to slow cooker
  • Add spices, beans, garlic, onions, and chives to a slow cooker, give it a good stir
  • Pour tomatoes and beef broth over the top, and stir again
  • Let cook on low setting for 6-8 hours
  • An hour before serving, stir in corn, and let cook.
  • Serve topped with garnish: fresh tomatoes, avocado, creme fresh, etc.
