Slow Cooker Black Bean Soup
Healthy, hearty, and so easy to make. This slow cooker black bean soup is packed with all the nutrients and anti-oxidants you need to protect your body this winter, and only requires a few minutes prep time, then the slow cooker or crock pot does all the work!

- 1 lb spicy sausage
- 1 tbs cumin
- 1 tbs onion powder
- 1 tbs chili powder
- 2 Tbs minced garlic
- 1 Tbs dried chives minced
- 3 15 ounce cans black beans
- 1 sweet potato peeled and diced small
- 1 medium onion peeled and diced small
- 1-48 ounce box of beef broth
- 1 15 ounce can of petite diced tomatoes
- 2 cups corn kernels
Cook 1 lb of spicy sausage until it is in crumbles, the put in slow cooker
Peel and dice sweet potato and onion, and add to slow cooker
Add spices, beans, garlic, onions, and chives to a slow cooker, give it a good stir
Pour tomatoes and beef broth over the top, and stir again
Let cook on low setting for 6-8 hours
An hour before serving, stir in corn, and let cook.
Serve topped with garnish: fresh tomatoes, avocado, creme fresh, etc.
