Shrimp Ceviche

Garlic, lime, shrimp, tangy tomatoes, crunchy cucumbers, fresh cilantro, red and green onions, and more combine to make this amazingly flavorful ceviche!

Ingredients

  • 1 Tsp Olive Oil
  • 1 lb shrimp
  • 1 Tbs minced garlic
  • 2 Tbs lime juice
  • 1 1/2 cup cucumber sliced
  • 2 cups diced tomatoes
  • 1/2 cup chopped cilantro
  • 1/4-1/2 jalapeno seeds removed, and diced small
  • 1/4 cup red onion
  • 1/2 Tbs minced garlic
  • 2 small limes juiced
  • 1/2 lemon juiced
  • 2 green onions chopped
  • Kosher salt to taste

Instructions

  • In a medium sized saute pan, heat olive oil and minced garlic
  • Add in shelled shrimp, and lime juice, cook until shrimp turn pink.
  • Remove from pan, rough chop shrimp, and set aside to cool
  • While shrimp cools, chop up cucumber, tomatoes, cilantro, onions, and jalapeno (Adjust according to the heat you want)
  • Stir together, and add garlic, lime and lemon juice, and salt
  • Stir in cooled, chopped, shrimp, and refrigerate for at least 15 minutes
  • Serve with chips
