Shrimp Ceviche
Garlic, lime, shrimp, tangy tomatoes, crunchy cucumbers, fresh cilantro, red and green onions, and more combine to make this amazingly flavorful ceviche!

- 1 Tsp Olive Oil
- 1 lb shrimp
- 1 Tbs minced garlic
- 2 Tbs lime juice
- 1 1/2 cup cucumber sliced
- 2 cups diced tomatoes
- 1/2 cup chopped cilantro
- 1/4-1/2 jalapeno seeds removed, and diced small
- 1/4 cup red onion
- 1/2 Tbs minced garlic
- 2 small limes juiced
- 1/2 lemon juiced
- 2 green onions chopped
- Kosher salt to taste
In a medium sized saute pan, heat olive oil and minced garlic
Add in shelled shrimp, and lime juice, cook until shrimp turn pink.
Remove from pan, rough chop shrimp, and set aside to cool
While shrimp cools, chop up cucumber, tomatoes, cilantro, onions, and jalapeno (Adjust according to the heat you want)
Stir together, and add garlic, lime and lemon juice, and salt
Stir in cooled, chopped, shrimp, and refrigerate for at least 15 minutes
Serve with chips
