Gluten Free Savory Black Bean Truffles
A savory black bean truffle made with gluten free Breton crackers; a unique and fun way to spice up an antipasto platter.

- 1 box 4.3 ounces of Breton Black Bean Garlic & Onion Gluten Free crackers
- 1 cup black beans drained and rinsed
- 1-8 ounce package of cream cheese
- 1-12 ounce bag of dark chocolate chips
Garnish
- Large crystal salt
- Dry chives
Put cream cheese, beans, and crackers in a food processor, and process until smooth
Using a TBS measurer, scoop out a TBS of mixture form into a ball. You should get about 18 balls from the mixture.
Put on parchment lined tray, and put in refrigerator or freezer to chill for at least 30 minutes.
In a microwave safe bowl, add chocolate chips, and heat in 30 second intervals, stirring between each heating until chips are melted. Usually 1-2 minutes total.
Dip each ball of mixture into the chocolate with a fork, and tap against the side of a bowl to let excess chocolate drip off.
Place dipped balls on a cooling rack or piece of parchment paper.
Sprinkle garnish over the top as desired and let chocolate set up (You may need to put them in the fridge to help the process).
