Toffee Brickle Cookie Dough Bites + Road Trip Snack Necklaces

Ingredients

  • 1 1/2 cup flour
  • 1/2 cup powdered sugar
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 Tbs corn starch
  • 1/2 cup salted butter softened
  • 2 Tbs vanilla
  • 1 Tbs milk
  • 3 Tbs caramel or butterscotch ice cream syrup
  • 1/2 cup toffee brickle bits
  • 1 Tbs sea salt
  • Additional toffee brickle bits for rolling the cookie dough bites in optional

Instructions

  • Put the sugars, flour, and corn starch in a food processor and pulse to combine
  • Add softened butter, vanilla, milk, and caramel sauce
  • Process for 1 minute 30 seconds, or until fully mixed.
  • Remove blade, scrape sides, and stir in salt and toffee brickle bits
  • Refrigerate 30 minutes to allow to set up
  • Roll into 1 Tbs side balls, and roll in Toffee Brickle Bits until covered
  • Place in airtight container and store for up to 1 week.
