Tapioca Pudding (Lactose Free)

Creamy tapioca pudding, high in protein, and calcium, and lactose-free!

Ingredients

  • 3/4 cup Minute Tapioca
  • 1 1/4 cups sugar divided
  • 3/8 tsp salt
  • 6 cups fairlife
  • 3 eggs divided into yolk and whites
  • 2 tsp vanilla

Instructions

  • Mix together 3/4 cup Tapioca, 3/4 cup sugar, 3/8 tsp salt, 6 cups fairlife, and 3 egg yolks and pour into a sauce pan. Let it sit in a pan for about 5 minutes
  • In the meantime, beat 3 egg whites and gradually add 1/2 cup sugar, and beat until stiff.
  • Turn pan on to a medium-high heat, and bring to a full boil, stirring constantly.
  • Boil for 1 minutes.
  • Remove from heat, and carefully fold in the beaten egg whites.
  • Add 2 tsp vanilla.
  • Stir well.
  • Scoop into your serving dishes, so it can thicken in them.
  • Serve hot, or chill and serve cold. You can eat it with vanilla ice cream, whipped cream, fresh or frozen fruit.
