High Protein Coconut Cream Pie Overnight Oats

Coconutty, creamy, and oh so delicious, these overnight oats are protein packed and a sure fire way to start your day off right.

Ingredients

  • 3/4 cup old fashioned rolled oats
  • 1 1/2 -2 cups coconut milk*
  • 2 tsp raw honey or sweetener of choice
  • 1 tbs sweetened coconut flakes
  • 2 scoops Vital Proteins Collagen Peptides

Instructions

  • In a bowl mix together the oats, and half the coconut milk.
  • Stir in sweetener and coconut flakes.
  • Add the other half of your liquid and the collagen peptides, and stir well. If you are using a vanilla greek yogurt, or other liquid, this is the time to add it. Adjust liquid according to preference and consistency desired.
  • Refrigerate overnight, garnish with additional coconut flakes, and honey drizzle if desired.

Notes

Substitute 1 cup of vanilla greek yogurt for 3/4 cup coconut milk if you want a creamier finished oatmeal.
Start with 1 1/2 cups coconut milk, but if you find your oats need more to be softened, adjust up. You want the consistency to be a little runnier than a yogurt.
