Peanut Butter Chocolate Chip Banana Bread

A super simple banana bread with a light peanut butter flavor, studded with chocolate chips, and topped with a thick, rich, peanut butter frosting. It tastes like dessert!

Ingredients

  • 3 bananas brown, mashed
  • 1/4 cup melted butter
  • 1/4 cup peanut butter
  • 1/2 cup sugar
  • 1 egg whisked with a fork
  • 1 tsp vanilla
  • 1 tsp baking soda
  • pinch of salt
  • 11/2 cups flour
  • 1 cup semi-sweet chocolate chips

Peanut Butter Frosting

  • 2 cups powdered sugar
  • 1 tsp salt
  • 1 1/2 cups creamy peanut butter
  • 1/2 cup unsalted butter softened

Instructions

  • Preheat oven to 350
  • In a bowl, mix all ingredients except chocolate chips by hand until well incorporated
  • Fold in chocolate chips
  • Pour into a greased bread pan (approx 9x4x4)
  • Bake 50 minutes to 1 hour or until browned and toothpick inserted in middle comes out clean (check at about 50 minutes)
  • Cool on rack
  • Mix frosting ingredients together in a large mixing bowl, and then top the cooled bread with the peanut butter frosting mixture.
  • Slice and enjoy!
