Lightened up Chicken and Sweet Potato California Burrito

A lightened up chicken and sweet potato California style burrito that is wholesome and delicious.

Ingredients

  • 4 Burrito sized flour tortillas
  • 2 cups Alexia® sweet potato fries
  • 2 cups NatureRaised Farms® Frozen Chicken breast strips
  • 1 cup Pico de gallo
  • 4 Sweet mini peppers sliced
  • 1 cup Pepper jack cheese

Instructions

  • Prepare sweet potato fries according to package directions.
  • Preheat oven to 350 degrees
  • Lay flour tortillas out on a piece of foil, and evenly distribute the chicken, fries, pico de gallo, sliced mini peppers, and cheese over the top.
  • Fold into a burrito
  • Roll in foil
  • Bake at 350 degrees for approximately15 minutes until chicken is warmed through and cheese is melted.
  • Top with additional pico, sour cream, avocado, etc. and enjoy

Notes

If you want to freeze these, do so before baking them. Then on the day you want to eat them, bake in foil at 375 degrees for 25-35 minutes, or defrost and bake as normal.
