Pineapple Fried Rice Stuffed Egg Rolls

Ingredients

  • 1 Tbs olive oil
  • 1 tbs minced garlic
  • 1/2 cup pineapple chunks Dole
  • 1/2 cup peas frozen
  • 1/2 cup carrots diced
  • 1 zucchini diced
  • 1 large egg
  • 1/3 cup soy sauce Kikkoman
  • 2 Tbs pineapple juice Dole
  • 2 Tbs oyster sauce
  • 1 tbs brown sugar
  • 1/2 tsp Sriracha sauce
  • 2 cups Minute White Rice cooked
  • 16 egg roll wrappers

Instructions

  • Heat 1 Tbs of olive oil in a large skillet, add minced garlic, peas, carrots, and pineapple.
  • Push vegetables to one side, and cook an egg, scramble well.
  • Mix together the Kikkoman soy sauce, pineapple juice, oyster sauce, brown sugar, and sriracha,
  • Pour sauce over the vegetables and eggs,
  • Mix in the rice.
  • Cook for 2-3 more minutes.
  • Preheat oil to 375 degrees
  • Using a 1/3 cup measurer, scoop pineapple fried rice into the center of an egg roll wrapper
  • Fold the wrapper, wet the edges, and seal
  • Fry 3-4 minutes each until golden brown
