- 1 Tbs olive oil
- 1 tbs minced garlic
- 1/2 cup pineapple chunks Dole
- 1/2 cup peas frozen
- 1/2 cup carrots diced
- 1 zucchini diced
- 1 large egg
- 1/3 cup soy sauce Kikkoman
- 2 Tbs pineapple juice Dole
- 2 Tbs oyster sauce
- 1 tbs brown sugar
- 1/2 tsp Sriracha sauce
- 2 cups Minute White Rice cooked
- 16 egg roll wrappers
Heat 1 Tbs of olive oil in a large skillet, add minced garlic, peas, carrots, and pineapple.
Push vegetables to one side, and cook an egg, scramble well.
Mix together the Kikkoman soy sauce, pineapple juice, oyster sauce, brown sugar, and sriracha,
Pour sauce over the vegetables and eggs,
Mix in the rice.
Cook for 2-3 more minutes.
Preheat oil to 375 degrees
Using a 1/3 cup measurer, scoop pineapple fried rice into the center of an egg roll wrapper
Fold the wrapper, wet the edges, and seal
Fry 3-4 minutes each until golden brown
