Simple Choc Banana Brownie Cake

Ingredients

  • 1 1/2 cups self raising flour
  • 1/3 cup brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 heaped tbsp shredded coconut
  • 1 pinch salt
  • 2 eggs
  • 1 1/2 tsp vanilla essence
  • 1/3 cup coconut cream
  • 10 dates chopped
  • 3 bananas mashed
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tbsp raw sugar

Instructions

  • Start by preheating the oven to 356 degrees fahrenheit (fan forced). Lightly grease an oven-proof baking dish with butter or oil, or line with baking paper.
  • Place flour, brown sugar, cocoa, shredded coconut and pinch of salt into a large mixing bowl. Stir to combine.
  • Make a well in the center. Crack in 2 eggs and add vanilla essence. Gradually mix with a wooden spoon, stirring through more of the dry ingredients as you work your way from the middle to the edges.
  • Slowly add in the coconut cream and continue stirring until mixture is well combined.
  • Fold in banana and mix well.
  • Pour half of the batter into the baking tray. Sprinkle with half of the dates and half of the cinnamon and nutmeg.
  • Pour remaining batter on top then sprinkle with remaining dates, spices and raw sugar. Push the dates down slightly so they don't burn while cooking.
  • Sprinkle remaining dates (push down slightly so not sticking out so don't burn) and remaining spices and raw sugar.
  • Bake for around 50 minutes. Pierce with a skewer to check that the cake has cooked through. If batter sticks to the skewer, continue to cook for 5 to 10 minutes or until the skewer comes out cleanly.
  • Remove from the oven and allow to cool. Cut into slices and transfer to serving plates. Garnish with an extra sprinkling of shredded coconut and enjoy!
