This easy healthy eating sweet potato harvest recipe is one of my favorites because despite my love for cheesecakes, brownies, and cookies, I am really trying to help my family eat healthier.

Ingredients

  • 2 medium-sized sweet potatoes cubed
  • 1/2 cup pecans shelled halves
  • 1 Tbs orange zest
  • 1 small yellow onion chopped
  • 4 tablespoons melted butter If Paleo, substitute coconut oil
  • 1/2 cup zesty Italian dressing
  • 1 Tbs hot sauce more if desired
  • Salt and pepper to taste
  • 3-5 sweet mini peppers chopped

Instructions

  • Preheat oven to 350 degrees.
  • Mix all ingredients together in a 9 x 13-inch greased casserole pan.
  • Bake covered for 1 hour.
  • Remove top and stir.
  • Bake an additional 15 minutes, or until tender and browned.
