This easy healthy eating sweet potato harvest recipe is one of my favorites because despite my love for cheesecakes, brownies, and cookies, I am really trying to help my family eat healthier.

- 2 medium-sized sweet potatoes cubed
- 1/2 cup pecans shelled halves
- 1 Tbs orange zest
- 1 small yellow onion chopped
- 4 tablespoons melted butter If Paleo, substitute coconut oil
- 1/2 cup zesty Italian dressing
- 1 Tbs hot sauce more if desired
- Salt and pepper to taste
- 3-5 sweet mini peppers chopped
Preheat oven to 350 degrees.
Mix all ingredients together in a 9 x 13-inch greased casserole pan.
Bake covered for 1 hour.
Remove top and stir.
Bake an additional 15 minutes, or until tender and browned.
