Easy Turtle Poke Cake
The easiest poke cake in the history of poke cakes, this Turtle Poke Cake starts with a boxed cake mix that is baked then drenched in salted caramel, topped with stabilized whipped cream, and scattered with delicious bits of chocolate, caramel, toffee, and pecans! It is decadent, rich, easy, and delicious.

- 1 box of chocolate cake mix prepared according to package directions
- 1 8 ounce jar salted caramel sauce
- 3 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 Tbs gelatin
- 1/2 cup chopped up chocolate
- 1/2 cup pecan halves
- 2 Tbs additional caramel sauce
- 1/3 cup toffee bits
Bake cake according to package directions, and allow to cool fully.
Use a wooden spoon or chop sticks to poke several holes in the top of the cake.
Pour the salted caramel sauce over the top of the cake.
In a blender (or with a hand mixer), combine heavy whipping cream, powdered sugar, and gelatin. Mix until whipping cream has thickened (30-40 seconds in a high powered blender).
Drizzle caramel over the top of the cake. Evenly sprinkle pecans, chocolate chunks, and toffee bits over the cake.
Chill and serve!
