Crust
- 2 cups chopped walnuts
- 1/4 teaspoon salt
- 1 tablespoon agave or honey
- 3-4 tablespoons milk
Filling
- 1 medium banana
- 1 cup creamy peanut butter
- 1/4 cup milk
- 1/2 cup Greek yogurt
- 1/2 cup agave or honey
- 2 teaspoons vanilla extract
- Sliced banana and chocolate chips for garnishing
Make the crust: Place walnuts, salt, and agave in a food processor and pulse until mixture is crumbly. Drizzle in enough milk to form a ball of dough. Remove dough from food processor and press in the bottom and up the sides of a greased pie plate. Set aside.
Make the filling: Place banana, peanut butter, milk, yogurt, agave, and vanilla in a food processor and pulse several times until smooth and creamy. Pour filling into crust and cover with plastic wrap. Freeze pie 4-6 hours or until solid. Store pie in freezer until ready to serve. Garnish pie with sliced banana and chocolate chips. Slice pie into wedges and serve.
