Jasmine Tea and Coconut Popsicles

Creamy coconut milk combined with jasmine tea makes a unique and healthy frozen treat on a hot summer day.

Ingredients

  • 1/3 cup boiling water
  • 7 jasmine tea bags
  • 1 can full fat unsweetened coconut milk
  • 1 Tablespoon raw honey

Instructions

  • Combine water and tea bags.
  • Let steep ten minutes.
  • Add all other ingredients and whisk vigorously for about 30 seconds.
  • Pour into popsicle molds.
  • Freeze about 6 hours.

Notes

When filling popsicle molds, I leave about 1/4 inch at the top before I put the lid on. The liquid is thin so the stick sinks all the way down into the pop. Therefore I like to leave a little extra room for more comfortable holding.
