Dairy Free Crepes

Easy, Dairy Free Crepes that are amazingly delicious and great with a squeeze of lemon!

Ingredients

  • 1 cup SO Delicious Original Coconut Creamer
  • 1/3 c Sugar
  • 1/2 tsp Vanilla
  • 3 Eggs
  • 1 TBS Butter Room Temperature or 1.5 TBS Canola Oil
  • 1 cup Flour
  • Dash of Salt

Instructions

  • In a blender combine all ingredients.
  • Mix well, then let whip for an extra 30-45 seconds.
  • In a nonstick crepe pan or a crepe pan sprayed with cooking spray, heated over medium heat;
  • Pour about 1/4 cup of batter, and
  • Quickly tilt pan from side to side in all directions to spread and cover the pan bottom with the batter.
  • Cook for approximately 45 seconds, then flip and cook for another 30 seconds.
  • Serve with Fresh Lemon Juice squeezed on top.

Notes

*Note: This batter is WONDERFUL made the day before and let to rest in the fridge overnight.
