White Chocolate Macadamia Nut Cookies
These soft macadamia nut cookies are everything you want in a cookie and more!

Servings: 12 cookies
- 3/4 cup butter softened
- 1/4 cup shortening
- 3/4 cup packed light brown sugar
- 1/2 cup white sugar
- 2 eggs room temperature
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup coarsely chopped macadamia nuts
- 1 1/2 cups coarsely chopped white chocolate or white chocolate chips
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.
Beat in the eggs, one at a time
Stir in the vanilla extract.
Sift the flour, baking soda, and salt together
Gradually add flour mixture into the creamed mixture, but do not overmix
Fold in the macadamia nuts and white chocolate being careful not to overmix.
Chill for 5 -10 minutes in the fridge
Use a cookie scoop to scoop onto trays, leaving each scoop 2 inches apart
Bake for 10 minutes in the preheated oven, or until golden brown.
Cool 1-2 minutes on pan
Remove to cooling rack to cool the rest of the way and enjoy!
