Roasted Chickpeas

Delicious roasted chickpeas are an excellent source of protein, and an easy to make snack option.

Ingredients

  • 2, 15- ounce cans chickpeas drained, rinsed, and set aside
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1 teaspoon dried Italian seasoning

Instructions

  • Preheat oven to 400 degrees.
  • Toss chickpeas, olive oil, salt and pepper, and dried Italian seasoning together in a medium bowl.
  • Arrange in a single layer on a baking sheet
  • Roast in a preheated oven for 15-30 minutes until chickpeas are golden and desired crispiness is achieved.
  • Taste and adjust seasoning as needed.

Notes

The longer you cook them, the crispier they get. I like them crispy for snacking, and not as crispy for adding to salads and power bowls.
