Baked Greek Chicken

Greek style baked chicken is packed with flavor and is a snap to prepare. Aromatic and savory, herbed and meaty, this authentic Greek roasted chicken recipe is a versatile weeknight dinner star.

Ingredients

  • Greek Chicken Marinade
  • 2 lbs Chicken Breast boneless, skinless

Fresh Cucumber Salad

  • 1/2 cup Cucumber diced
  • 1/4 cup Tomato diced
  • 2 Tablespoons Red Onion diced
  • 1/8 tsp Salt
  • 1/4 tsp Dill weed dried
  • 1/4 cup Feta cheese crumbles

Instructions

  • Trim chicken breasts, and put them in a zip top bag.
  • Whisk Greek Chicken Marinade together in a bowl, and pour over chicken breasts.
  • Zip bag closed, and marinate for 1 hour
  • Preheat oven for 450 F.
  • Place chicken in a baking pan, with 2 Tbs of marinade in the bottom. Discard remaining marinade
  • Bake for 20-25 minutes, until chicken reaches an internal temperature of 165 F in the thickest part of the chicken breast.
  • Meanwhile, mix all of the Fresh Cucumber Salad ingredients together in a bowl. Set aside.
  • When time is up, take chicken out of the oven and let it sit for 5 minutes.
  • Spoon fresh cucumber salad over the baked chicken and serve immediately.
  • Serve with salad, rice or pita bread and a side of tzatziki sauce.

Notes

Optional: Sear chicken breasts before baking: to do, take chicken out of the marinade, and pat dry, then put in a skillet with a little olive oil, and sear about 3 minutes per side, until golden brown.
