Ingredients

  • 2 lbs chicken thighs

Marinade

  • 3 Tbs olive oil
  • 1 Tbs minced garlic
  • 1/3 cup fresh lemon juice
  • 1 Tbs red wine vinegar
  • 1 tsp dried oregano
  • 1 tsp dried dill
  • 1/2 tsp each: dried basil dried thyme, crushed rosemary, salt
  • 1 Tbs sugar
  • 1/4 tsp pepper
  • 1 ½ tsp dijon mustard

Instructions

  • Whisk together all of the Marinade ingredients in a bowl. Reserve 1/2 a cup.
  • Pour marinade into a large freezer bag and add chicken.
  • Marinate 4-8 hours.
  • Remove chicken from fridge and let sit at room temperature 20-30 minutes.
  • Meanwhile, preheat oven to 375 degrees F.
  • Use cooking spray or olive oil and coat the inside of a baking dish.
  • Place the chicken pieces in a single layer, without extra liquid.
  • Bake uncovered for 45 minutes until chicken reaches internal temp of 160 degrees
  • Remove chicken from oven, and turn oven on to broil.
  • Pour reserved marinade over the top of the chicken thighs.
  • Return to oven heated to Broil on high.
  • Broil for 3-4 minutes on high to crisp up skin, and turn it a golden brown.
  • Rest 5 minutes before serving.
