Superfoods Green Detox Salad
This superfoods green detox salad is insanely delicious and has everything you need to redeem those extra calories - chickpeas, quinoa, microgreens, spinach, red cabbage and herbs.

For the Chickpeas
- 2 cups Cooked Chickpeas
- 2 tablespoons Olive Oil
- 1 teaspoon Paprika
- 1 teaspoon Cumin Powder
- 1/2 teaspoons Turmeric Powder
- Salt to taste
For the Salad
- 1 cup cooked Quinoa
- 4 cups chopped Greens I used Lettuce and Spinach
- 1 cup chopped Purple Cabbage
- 1 cup spiralized or sliced Carrots
For the Dressing
- 1/4 cup Olive Oil
- 2 tablespoons Lime Juice
- 2 tablespoons Dijon Mustard
- 2 tablespoons Honey
- 1/2 teaspoon dried Oregano
- 1/2 teaspoon dried Basil
- Salt and Pepper
Pre-heat oven to 425 degrees.
Dry the chickpeas completely with a towel and toss them in the remaining ingredients listed under chickpeas. Roast for 15 - 20 minutes till they are golden brown.
Whisk together all the ingredients listed under dressing and set aside till you are ready to serve the salad.
To assemble the salad, add the roasted chickpeas, quinoa, greens, cabbage and carrots to a bowl. Add the dressing and toss to combine.
If serving the salad later, you can assemble all the ingredients and keep it in the refrigerator. Add the dressing just before serving or the salad will turn soggy.
