Ingredients

  • 12 MorningStar Farms® Original Sausage Patties
  • 72 tater tots

Scrambled Eggs

  • 10 eggs
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 Tbs milk

Pepper Mix

  • 1/2 cup green pepper chopped
  • 1/2 cup large yellow onion chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 Tbs olive oil

Classic Breakfast Burrito

  • 4 MorningStar Farms® Original Sausage Patties cooked
  • 4 flour tortillas burrito size
  • 1 cup cheese
  • 1 cup scrambled eggs already cooked
  • 1 cup black beans drained and rinsed
  • 24 Tater tots cooked

Cowboy Breakfast Burrito

  • 4 MorningStar Farms® Original Sausage Patties
  • 4 Wheat tortillas burrito size
  • 1 cup scrambled eggs already cooked
  • 1/4 cup black beans
  • 1/4 cup sweet kernel corn
  • 1/4 cup Pepper Mixture from above
  • 1/4 cup MorningStar Farms® Bacon
  • 1/2 cup cheese
  • 24 Tater tots cooked

Veggie Breakfast Burrito

  • 4 MorningStar Farms® Original Sausage Patties
  • 4 Spinach tortillas burrito size
  • 1/2 cup scrambled eggs already cooked
  • 1/4 cup black beans
  • 1/4 cup sun-dried tomatoes
  • 1/4 cup Pepper Mixture from above
  • 1/4 cup spinach chopped
  • 1/4 cup red bell pepper chopped
  • 1/4 cup cheese
  • 24 Tater Tots cooked

Instructions

Cook MorningStar Farms® Original Sausage Patties

  • Cook MorningStar Farms® Original Sausage Patties according to package directions.
  • When finished cooking, chop the MorningStar Farms® Original Sausage Patties into bite sized pieces. Set aside.

Cook Tater Tots

  • Cook Tater Tots according to package directions, set aside.

Scramble Eggs

  • In a large bowl mix all eggs together, add milk and salt and pepper, and whisk until combined.
  • In a large skillet, over medium heat, cook eggs until desired doneness is reached. Set aside

Pepper Mixture

  • Heat olive oil in a large skillet, over medium high heat, add chopped green pepper and onions.
  • Saute chopped onions and green peppers until tender, and fragrant, add a little salt and pepper. Set aside.

Assemble

    Classic Breakfast Burritos

    • On a piece of foil, lay out each tortilla.
    • Top each tortillas with: 1/4 cup each: chopped MorningStar Farms® Original Sausage Patties, scrambled eggs, black beans, shredded cheese, and 6 Tater Tots.
    • Fold into a burrito
    • Wrap with foil
    • Label

    Cowboy Breakfast Burritos

    • On a piece of foil, lay out each tortilla.
    • Top each tortillas with: 1/4 cup chopped MorningStar Farms® Original Sausage Patties, 1/4 cup eggs, 6 tater tots, 1 Tbs each black beans, corn, pepper and onion mix, MorningStar Farms® Bacon, and 2 Tbs of shredded cheese.
    • Fold into a burrito
    • Wrap with foil
    • Label

    Veggie Breakfast Burrito

    • On a piece of foil, lay out each tortilla.
    • Top each tortillas with: 1/4 cup chopped MorningStar Farms® Original Sausage Patties, 2 Tbs scrambled eggs, 6 tater tots, 1 Tbs each black beans, tomatoes, pepper and onion mix, sun-dried tomatoes, chopped spinach, and red peppers. Add 1 Tbs of shredded cheese.
    • Fold into a burrito
    • Wrap with foil
    • Label

    Freeze

    • To freeze, once burritos are wrapped and labeled, put in a freezer bag, and label with name and date.
    • Freeze.

    To Cook

    • From frozen, preheat oven to 350 degrees, and baked in foil for 25-30 minutes.
    • Fresh, preheat oven to 350 degrees and bake for 12-15 minutes until heated through.

    Notes

    Notes: I have included the MorningStar Farms Original Breakfast Sausage Patties, Eggs, Tater Tots and Pepper Mixture twice in the ingredients, once to show how much you need total to make enough for 12 breakfast burritos, 4 of each flavor. But also included it individually to show how much goes into each burrito type. Keep this in mind when calculating nutrition. Adjust cooking time in order to achieve the level of crispiness on the outside of the burrito as you see fit. Cooking in foil will help you have a less crisp exterior.
