Southwest Fajita Cheeseburgers
Juicy burgers with totally craveable flavors. Monterey Jack cheese, chimichurri, and a delicious pepper and onion mixture to top the burgers with. All served on a brioche bun!

- 10 oz Ground Beef
- 1/4 cup Chimichurri Sauce with Olive Oil
- 2 oz Monterey Jack Cheese
- 1/4 cup Roasted Red Peppers
- 1 Red Onion
- 2 Brioche Buns
- 10 oz Sweet Potatoes
Spice Mix
- 1/2 teaspoon Cumin
- 1/2 teaspoon Paprika
- 1/2 teaspoon Ancho
Prep
Preheat your oven to 425 degrees.Cut ends off the red onion, and cut in half lengthwise. Make the strips of onions about 1/4 inch.
Season Sweet Potatoes and Roast
Place sweet potatoes in a medium bowl. Drizzle with about 1 tablespoon cooking oil. Season with salt, a pinch of pepper and about half of the cumin, paprika and ancho spices. Stir to coat.Spread your sweet potatoes out in single layer on a lightly oiled, foil-lined baking sheet. Roast for about 20 minutes.
Assemble
Top buns with beef patties, sauteed onion, and roasted red peppers, and top with the top bun. Serve with roasted sweet potatoes and remaining chimichurri sauce.
