BLT Potato Salad

Loaded BLT potato salad, with tons of flavor, and hardly any work. A potluck go to.

Ingredients

  • 15 ounce READ® German Potato Salad
  • 3 Roma tomatoes diced
  • 1/4 cup finely diced red onion
  • 2 cups baby arugula
  • 6 pieces of crispy cooked bacon crumbled

Instructions

  • Cook bacon to crisp using your favorite method, then crumble or chop into bite sized pieces. Set aside.
  • Wash baby arugula. Set aside.
  • Dice tomatoes and remove any excess seeds in order to reduce the amount of liquid in this salad. Set aside.
  • Finely dice red onion, and set aside
  • Open can of READ® German Potato Salad, remove lid, and dump into a large salad bowl.
  • Add in bacon, arugula, diced tomatoes, and finely diced red onion. Mix together in a large bowl and serve immediately.
