Leprechaun Bait

An easy, no-bake St. Patrick's Day treat that is sweet, crunchy, festive, delicious, and fun for the whole family.

Ingredients

  • 7 cups Rice Chex cereal
  • 1 cup Lucky Charms
  • 1 cup Pretzels Sticks or minis
  • 1 cup Mini Marshmallows or more Lucky Charms Marshmallows
  • 1/2 cup M&M's
  • 1/4 cup Sprinkles optional
  • 11 ounces White Chocolate Chips

Instructions

  • In a large bowl combine everything but the white chocolate chips, reserving a few M&M's and Lucky Charm Marshmallows to put on top for color.
  • In a microwave safe glass bowl, melt the white chocolate in the microwave for 30 seconds on 50% power. Stir 20 seconds, and repeat until the chips are completely melted.
  • Immediately pour white chocolate over snack mix, and gently stir to combine.
  • Once everything is coated, add reserved treats, and pour whole mixture onto a parchment lined baking tray.
  • Let sit at room temp or in the fridge to allow chocolate to set back up and harden.
  • Break apart and serve.

Notes

Can be stored in an airtight container or bag for up to a week.
Be gentle when stirring so as not to break the Chex cereal
Work quickly, pouring chocolate over as soon as melted, and stir fast.
