Steamed Peas Vinaigrette

You only need 5 minutes to make this light fresh side dish made with snow peas, radish, and a tasty vinaigrette.

Ingredients

  • 1 c snow peas
  • 1 c sugar snapped peas trimmed
  • 1/2 c thinly sliced radishes

Sauce

  • 1 T rice vinegar
  • 1 T soy sauce
  • 2 tsp olive oil
  • 1 1/2 tsp mirin
  • 1/2 tsp black pepper
  • 1/8 tsp salt

Instructions

  • Steam peas covered for 3 minutes or until crisp tender
  • Wisk sauce ingredients together
  • Pour over peas mixture, and toss with radishes
