Ingredients

  • 1 Tbs olive oil
  • 1 Tbs Garlic minced
  • 1/2 tsp fresh ginger
  • 1 1/2 lbs chicken breast diced small
  • 1 zucchini diced small
  • 1 yellow squash diced small
  • 1/2 a large red bell pepper diced small
  • 1 cup small chopped broccoli
  • 1 cup sugar snap peas
  • 1/2 a package lo mein noodles

Sauce

  • 1 tablespoon of rice wine Mirin or dry sherry
  • 2 tsp brown sugar
  • 2 tsp sesame oil
  • 1 tsp fish sauce
  • 1/2 tsp soy sauce
  • 1 tsp of chili garlic paste or Sriracha sauce
  • 1 Tbs oyster sauce
  • 2 Tbs water
  • 1/2 tsp garlic salt

Instructions

  • Cook lo mein noodles according to package directions.
  • Mix sauce and set aside.
  • Place a large skillet over medium heat, and add olive oil.
  • Add garlic and ginger, and saute for 1-2 minutes until fragrant
  • Add chicken, and cook 2-3 minutes, then add in vegetables, except broccoli and sugar snap peas.
  • Cook until veggies are tender and chicken is cooked through, approximately 3-5 minutes
  • Add noodles and sauce, toss everything together, and add broccoli and sugar snap peas to pan.
  • Cook an additional 1-2 minutes, to reduce sauce, and cook broccoli.
  • Serve hot!
